should I be looking at the current, minimum, maximum, or average temps when trying to see if my cpu is getting too hot? this was taken seconds after a one hour long gaming session. ik 95 C is friggin hot but if it only peaks at 95 for a bit and keeps a low avg is it a problem?

im only worried about my cpu, the gpu is cool as a cucumber

Assuming this is a notebook. 95 C is seems to be the limit and it's also throttling but quite common on notebooks which aren't cable of dissipating enough heat.

You won't cook your system as the CPU will automatically throttle down when reaching critical temperature.
I can't say those temperatures are OK and throttling can have adverse effects on performance.
But there's not much you can do besides of running the fans at higher speeds.
