Summay + Sensor window without the main back window?

Is there any way to do this? I can't find an option, but perhaps a plugin or command to add on the end of a shortcut when running it?

There's no dedicated option for such mode. You might try with the following options enabled:
"Show System Summary on Startup"
"Show Sensors on Startup"
"Minimize Main Window on Startup"
but that will also minimize the Summary screen after start, so you will need to activate it by right-click on the tray icon + Summary.
