Once the Hardware-accelerated GPU scheduling set to Off and the computer has been restarted, those missing sensors show.

Does Task Manager show those values under the GPU performance tab?
Can you attach the HWiNFO Debug File of both settings?

I have attached the HWiNFO Debug files for both settings in attached file hwinfo.7z and two screenshots showing Task Manager GPU Performance Tab for each setting as requested.
