Knowing when something hit the max temp/usage

Is there a way to know at what time and date exactly something like my CPU or GPU hit the max temp value? I was just watching the hwinfo sensor status chart and I noticed that my CPU and GPU had reached really high temperatures, and I'm not sure how and when this happened, since my computer tends to have acceptable temps even with hardcore gaming.

You will need to start sensor logging, so you can then inspect the values back.
